roast chunks of various vegetables of choice for 30 minutes at 200 celcius
sprinkle with plenty red wine vinegar when taken out of oven. allow to cool. sprinkle over a pack of feta cheese and stir in.
get a readyrolled puff pastry and place on baking paper on an oven tray.
apply roasted veg - leave 2 inch border
fold up borders and pinch corners together
bake 30 minutes at 200 or until pastry is golden

So nice, my knuckle-scraper of a meat eating husband decided to have the rest for his dinner the next day and commented on how lovely the pumpkin was :shock:

Great as a stand alone veggie dish but we had it with grilled chicken and salad as well  :D

Brill, my sort of recipe, can chop veg in advance too.

10 mins prep, 1hr of "hard working" smell coming from the oven.

Even lazier....serve the veg on cous cous, or rice cooked with stock cube of your choosing.

Do some vicious yorkie puddies though which is acceptable application of pastry to a meat dish.

I can think of a lot of Yorkshire friends on mine that would have something to say on Yorkshire puds being classed as pastry. Mine don't come out like that - is that why your's are 'vicious'. :wink:

best yorkies are made by men..........iced water and batter blitzed in a blender loads of air . hottest  oil / fat as you can .i like mine smoking . least amount of time out the oven with ya tray.. n dont open the door for 20 mins then the pud will have set and you can watch it turn a dark golden brown .. with jam  or anything ya fancy . i like em plate size filed with a great pan of shackles ( stew ) bloomin marvelous  :wink:
