How much do i cut them back to?

Can i also do the same with my sweet peppers?

Not 100% about sweet peppers although I'm going to cut mine back this year.....probably by about 2/3.

Reduce the plant size by 2/3, trim the root ball.
plant in a smaller pot with fresh soil.
