i picked up about 5 large bunches coriander at the supermarket today, was going to use two packets with some parlsey to make breadcrumb coating ofr chikcen and freeze it, but what can i do with the rest?
wondered if i could chop and freeze, maybe in water, or chop and preserve in a little olive oil, was too good to waste and 15 p per packet to boot - worse case scenario jsut will make lots of breadcurmb coating, just thought i could maybe do something else with it

I chop and freeze under water in small amounts (ice-cube up to about 1 fl oz - pack the chopped coriander in, then gently trickle water in to fill up the gaps).  Then stick it into your curry or whatever at the end as you normally would, but with slightly less liquid in the recipe.

Perfect, i was hoping i could do that, trap the freshness.
had a stupidly hectic day, not fun for the most part, so hope they will still be ok tomorrow, as cant face doing it now  :blink:

I don't know if it works with corriander but with parsley I just stick it in the freezer in a bag and then when it's frozen crumple it in the bag. Hey presto chopped parsley.
