Parsnip tops dying back.

My parsnips (started in Feb) have very little green growth on top any more, the leaves have all started to die back.

Is this normal?

If they die back completely can i still leave them in the ground and harvest as needed?

The leaves dying back shows they are mature.  They can be safely left all winter, in fact the frosts improve the flavour
