Oven dried toms

Got a bit of a glut of toms at the moment so tried out oven drying.  First go ended up as black, burned crisps (due to the fact we went out and I forgot about them).

The next resulted in the most beautiful sweet toms, bottled in oil so going to do more today

They're good dried in the oven, with a bit of olive oil, salt, pepper, garlic with or without some thyme or other woody herb. You can freeze them too in small quantities.

I sprinkled them with pepper salt and garlic powder .  Can't believe how sweet they are. Got 2 jars done now  :)

Virtually that receipe Mum.  I left mine for just over 3 hours, lowest oven setting and did not quite close the oven door but pushed it too and held it to the oven with the bin .

Keep checking them though as smaller ones will be ready before the larger ones  -  oh and don't go out shopping like I did  ;)

Made me chuckle Sarajane, as my first lot this year were very dark and crispy --- they were small tomatoes and I didn't adjust the time  :lol:

just done another batch using my small tomatoes - 5 hrs, lowest oven setting, with my usual mix of sugar, salt and olive oil (in proportions of 1 tablespoon to 1 teaspoon to 4 tablespoons respectively).

Lovely chewy, intense flavour

This also works VERY well with green tomatoes.

Trying this recipe today with a very large glut of cherry tomatoes.
Glad it works with green tomatoes...what about green roma plum tomatoes?

I've just put some in the oven and I stuck a green Roma in too Plottered.  I shall let you know (unless you're finding out for yourself!)... :)

does anyone else feel guilty for leaving oven on this long? :(

also - reminder to people to keep checking that the oil covers the toms as they can plump up after bottling and rise above the oil surface - result=hairy tomatoes, as I learned last yaer

I thought about leaving the oven on yesterday whilst doing mine......then I tasted one and thought....yep theyre lovely so blah to the oven....didnt try a green roma though as I couldnt get to the greenhouse for a flooded out garden  :(

Me! I wouldn't dare leave my oven on for so long. Found a site that tells you how to build a solar powered dehydrator  :lol: :lol: :lol: Not been worth attempting it this year though!
