ive picked the three best heads for next year should i dry them with the others and plant them in oct? what would happen if i plant them sooner?

Yes, dry them with the others so they'll get into growing mode again.

If you plant them too soon, they could get stepped on during the rest of your harvest. Since they prefer cold weather, fall really is a better planting time. I do mine in September while a local garlic guru insists November is best. I still get good heads.

I grow every thing in beds so  they shouldn't get stepped on, but I just got the lotty last Oct so they went in as soon as I had cleared a bed. Probably a follow on this year from beetroot or squash or carrots.
