dehydrating mashed artichokes advice please,

Whats the best way to deal with a glut of artichokes hopefully? I'd like to do some instant meals like mashes for next spring summer when i'm busy gardening.

As you refer to mash, I take it you mean Jerusalem and not Globe? :)

Got a recipe for you which I haven't tried and one I have.  Can't see why you couldn't adapt either of them to Jerusalem artichokes.

Potato flakes (not tried)

Spread cooked mashed potatoes on drying racks lined with slightly oiled cling film and dry.  Break into chunks and process or blend until ground into flakes.

Potato slices (done and works well)

Peel and slice potatoes.  Parboil 5 mins, drain and cool.  Dip into a solution of 1/4 cup lemon juice and 2 cups water. Dry until slices are hard.

what do you use them for once they are rehydrated please?

and can you store the cooked  mash as lumps ie with out blending. I only have a small bar mate type.?

Not sure about the mash to be honest Rachel as not tried it.  Think it may be hard to reconstitute as a big lump.

I used the slices in either stews or you can layer them in a dish with milk and cheese then bake.  I left them all day in the fridge to soak, then stuck them in the oven that evening to bake  :)

I was thinking of a very thin layer then bashing it  up abit with a steak tenderiser i'll have to give it a go once the maincrops are in again
