When you say "tested" I'm an official tester of HCB (honest guv, I got a certificate from the tintenet )

ok got the recipe and then realised how i found this site  :nowink: i was looking for a recipe for picallilli and came on here,then i looked closer at what else was available on here i promptly joined up!!!thank you google :D now as a head chef all across europe for more than 25 years the first thing i learned about a recipe given to you by someone else is ---- FOLLOW IT TO THE LETTER--- then you can start tweeking it to your personal pallette ,i still love my kitchen time ,all be it limited with what i can do__ and memory :D but will give this a go tonight and i allready have my tweeks in place for the morning mk11 batch.and dd by the way !!! if you where one of my commies from many years ago (used to teach at inverness colledge ) you get a gold star for those buns mate,goddam new you where a better gardener but allway,s thought i could beat you in a kitchen! :D :D

You're right Jay, follow the initial recipe to the letter, then tweak to suit.

My tweaks are: 4.5 fl oz water - the little bit less makes the buns go more upwards and less outwards for me - and I've increased the amount of fruit to 6oz after a comment from one of my "samplers".

It may not work for others though.
