They'll be OK for a month or so, just keep an eye on them, once they start growing they will run to seed, although you can cut the stem out of the middle and the outside will still be usable.
Did it really tell you to do THAT on the packet?

use them as you want them, as long as they're not in your way. If they are in the way slice and freeze them  :)
