Just made some lush parsnip soup
« on: November 12, 2011, 17:37 »
Since my parsnip crop was eaten by the mice, I bought a sackful from the carrot man who sells me carrots for my horse. They're the biggest parsnips I ever saw. One parsnip, after being peeled, topped, tailed and cored, weighed half a kilo, and they're all that big :)

But parsnip is my very favourite soup so I made a big batch. I used the Jamie Oliver recipe and it is very nice indeed. I like the creaminess from using milk with the stock, but if I made it again I'd add more spiciness. He just uses ginger and garam masala, but I think it would be better with either chillis or curry powder to give it a bit more kick.

Ooh lovely! :) Curry powder, or paste, is a good addition.
