Self-blanching celery

Self-blanching celery

What a con. Dark green to a plant, great for cooking but far too hard to eat raw. Anyone any tips on this or is the best idea to disbelieve the self-blanching tag and earth them up?

Mine are Utah, which is a green variety..

I really can't remember which variety other than that I bought them from Homebase as self-blanching

They should be planted in a block formation. Surround the outside of the block with thick cardboard  and pack straw between the individual plants.
