Quinces are horrible things to have to deal with.  I remember my father proudly picking them by the bucketful and then watching my mother tortuously trying to get some flesh off them.  The cores are big and leave only about half an inch of flesh.  They are also so hard you can't get a peeler over them either.  Occasionally we would be offered Dad's quinces out of a jar.  We declined politely.

If you use them at all, use them whole.

Quince jam is lovely especially when adding some to braising venison!
You don`t need to peel only core when making the jam.

in the olden days my parents used to make quince wine which was prone to exploding...

I have a tree full of ripening quinces - the large over-size pear ones -which I'm going to donate to the local women's institute to see what they can come up with!
Gardening organically on chalky, stony soil.

Maybe it depends on the kind of Quince...? We were given some once and my mum made asome fab jam - it was a gorgeous vivid pinky/orange like the flesh of the fruit - it tasted lovely - had a dry quality.

I have seen other quince fruit which weren't that colour so maybe there are different varieties? Worth a google possibly sorry I can't help more.

While browsing through the website I saw this thread about quince....I hate to dissagree with all you good people but quince are delicious!  I think that you are confusing the edible quince (Cydonia olbonga) with the flowering quince(Chaenomeles x superba) which grows so well there in Britain.  Those do have bitter tiny unpalatabe fruit.  The true quince makes lovely jams, jellies, preserves and best of all quince paste! There are just coming int the market here in Lebanon...ran out of jam to soon this year ...going to make more this year you can be sure of that!
Love reading about everyone's experiences in gardening... good and bad...Living in an apartment ,most of my gardening is done in pots now...but have gardened most of my life..

Thanks for the welcome Wisky_golf... although I live in Leabanon my daughter lives there in Britain and just started an allotment this summer.  Since I have more time than she.. I browse through the Allotment and Gardening sites to garner tips to help her.   And many thanks to mushroom for those lovely links, especially the historical site.... just loved it..the first one is the one I use for quince paste only I add rose water to it also right at the end... I usually cut it into finger size and roll in caster sugar for just a bite when I want "something sweet".

Damn, I've just bought my first ever one, along with some mangoes and lychees, and thought it was going to taste like a pear!
