recycling pickling vinegar?

Hi
just been pickling some beetroot as we have loads.   Getting through a lot of pickling vinegar and just wondered if you can re-use it again ??  My gut feeling is "yes why not" as OH keeps bought pickled onion vinegar when all onions eaten for putting on his chips .... what do you think?

I'd suggest you keep it for your chips since it will have reduced preserving power (acidity) for next time around.   You might try it on something like beetroot if you plan to eat it pretty quickly.  At about £2 for 5 litres it is pretty cheap stuff - a much better bargain than botulism!

Technically, you could concentrate it by boiling off the water (acetic acid boils at 118degs C).  I reckon you'd use more energy than you'd save buying fresh vinegar.  :D
