We have a good crop of spring onions and young leeks.

But how much of the green stuff of each can you eat?
 :?: And what do think is the best way to cook 'em :?:

Answer.... all of it unless it is a bit tough. :lol:

Spring onions go well in salads and stir fries.  Leeks are  good braised in butter, steamed, with a bechamel sauce and in quiches.  More ideas if you want them.
Cheese makes everything better.

I'm fussier. I cut about 2 inches above the whitest parts and toss the stronger green parts out.  too bitter for me. The good stuff is fab in potato leek soup.

small or big leeks are nice lightly steamed and served with parsley sauce
great with fish and mash  :wink:

Here is a recipe that uses whole spring onions (inc green bits)
