what do I now do with my strawberries

I have successfully rooted my runners, seen posts on here that mention cutting them back for the winter. Do I cut right down so no leaves are left? Also can I leave them in their little pots until next spring or do I plant in open ground where they will eventually end up, only had one or two in pots this year hence little pots!!

Last year I potted up 13 runners, left them next to the donor plant with stalks still attached.  After about 1 week when it was clear they were happy in the pots I chopped the stalks off and put the pots on my decking (sure there are probably proper technical terms but I don't know them).  I watered them for a few weeks and then forgot about them as life got a bit busier.  Then I found them again, once the snow had thawed, about March time.  I planted them out end of March, covered in cloches and they were the only thing that did well for me this year.  Every time the kids were in the garden they were picking fruit, in fact still got 7 flowers on one of the new plants now!  I've done the same again this year and planted up 10 runners.  Hope that helps a bit.

how can you tell that they are well rooted.

I potted some plants from the parent plants, as I was going to get rid of all the old plants and re-start a new bed with new plants.  After a week or two, I snipped off the trainer, and then planted into the new bed after I had given it a good digging, shoved compost in and covered over with weed suppresent membrane. 

I never cut the foilage from the strawberry plants though, just a general tidy up, eg removing old dead leaves, so there's nothing lurking underneath.
