I have had a great chilli harvest so far.  But the skins on my De Cayenne that I put in a stew last night were very unpleasantly tough and chewy.  Not had this problem before.  I only added them at the end to retain heat, but has anyone else had this problem?  They have been sitting on the plant fully ripe for around a month - could this be the problem?

Also, I am keen to dry them to use over the winter - do I leave them to dry out on the plant or should I pick them and hang them up?

They are indoors, in pots on sunny windowsill.  Weekly feed, and minimal watering.

Hi Kermit,

My de Cayenne are cropping profusely this year, but there's not one sign of any of them turning from green yet.  I have noticed a, shall we say, robustness to the skins when chopping, but no residue of toughness once they are in the finished dish.

For Cayenne, they're bloomin' hot though!
