Use the same recipe as for green gooseberries. Gooseberry jam tends to go pinkish in cooking anyway.

Do I use less sugar than with green ones?

Use the same amount or at least an equal amount of sugar to gooseberries. eg. 4 lb gooseberries, 4 lb sugar.

I just discovered I have quite a crop of gooseberries in my garden, ones that are starting to go reddish. As I'm not familiar with gooseberry taste, I take it that these are now ripening. How is the taste of gooseberry jam? What would you compare it to, and are the seeds large? I always jelly my currants as I find the seeds large. Is there anything else I can make with gooseberries as I really do have more than enough jams and jellies right now.

Having ripped my arms to shreds yesterday picking my goosgogs, i made jam this afternoon, well, I would have done if the phone hadn't rung and 30 yes, 30 minutes later I remembered the jam, which at that point was treacle..... the pan's still soaking (note to self; get an answer machine) Jude.
