BTW, aubergines are known as eggplants in North America.

Do leave the big black beetles as they really are after pests rather than crops. Holes in leaves are very often due to flea beetles and the solution is on the site. They don't kill the plant but do make a mess of them.
As for the dying, I'm having the same problem and suspect it's due to irregular watering and feeding. I also have a serious problem now in the aubergine bed with ants making new nests so that's another possibility - 2 pests disguised as one.
