Do cauliflower bolt because the head on 2 of mine arnt compact and round like the others they are kind of all over the place with some bits bigger than others. Will it settle down and become a nice round head or will it stay as it is.

Any ideas.

Sounds like yours is bolting and won't obey the shape you want. Best to pick when possible.
