just made these for the first time - they're sooo easy, if a bit time consuming. Did almond & cranberry to go in gift hampers - then found out tomorrow's get together was cancelled until Christmas Eve:- they'll keep, but I'll have to freeze the shortbread for those on egg-free diets. Good news is no MIL tomorrow  :tongue2: - bad news is OH will have to do a 180 mile round trip to collect her crappy presents on Christmas Eve  :mad:

here you go Chrissie,

Cranberry & pistachio/almond etc biscotti
245g Plain flour
2 large eggs
135g granulated sugar
1 tsp baking powder (I use bicarb cos I've never got baking powder, seems to be OK!)
75g dried cranberries/raisins
60g flaked almonds/macadamia/pistachio/hazlenuts - take your pic!
oil for greasing
parchment paper

optional  extras/variations
vanilla essence or almond essence 1/2 tsp
60g white chocolate chips/dark chocolate chips
30g candied peel
You can also do them with crystallised ginger/stem ginger apparently

Method

Preheat oven to 350F 177c Gas 4; very lightly oil a non stick baking sheet and cover with baking parchment - this is essential!

Beat sugar & eggs together for  3-5 mins until pale & thick
Beat in any essences if using
beat in flour, then add remaining fruit/nuts/chocolate if using
You should have a sticky dough
Wet or oil your hands and dollop the dough onto the baking sheet.
Squish it into a log, roughly 12 inches long by 31/2 wide.
Bake in the oven for 25 mins until firm to the touch and lightly browned
Remove from oven (Leave oven ON!!)

Cool for 10 mins on a rack.
Place on chopping board and slice diagonally into thin biscotti. (About 1 cm)
Turn oven down to Gas 31/2; 325F or 160c
Pop biscotti back into oven for 10 minutes or so on each side until golden brown, leave until completely cold before storing in airtight tin/box - they will harden!

ENJOY - fat free, almost, but NOT calorie free  :unsure:

I'd forgotten how much I lurve these, and they will make a brill gift for my friends across the road too -- he is italian and will appreciate them.

That's if mine turn out as scrummy as yours of course   :unsure:

Looks like I will be snowed in tomorrow too.  Got the ingredients to make pistachio and chocolate biscotti and venison casserole tomorrow.  Life is hard. :lol:
