spice apple butter without cider?

I would like to make the spiced apple butter but without cider. does anyone know what can be used instead? Have lots of apples to use up and really like the sound of this one but myself and family do not drink!

Heating drives off any alcohol in the cider. If you are still concerned then I would just use apple juice instead.
