Sunflower seeds

Hi

We have grpwn 3 sunflowers this year - they have now started to die back.  We quite like the idea of eating the sunflower seeds, are all varieties edible and please can anyone tell me how to harvest them.

I tried some of mine the other day....they had been drying for a few weeks in the greenhouse. They were nice but a fiddle to get out of their, quite tough, shells.
Unless anyone knows an easy way, i don't think I'll bother..........just leave them for the birds

I toast mine in the oven for  few minutes.  Then put them into a teatowel rough them up a bit then move to a pot for final shelling.  It is still fiddly but less fiddly.  :)
