And how do a know if it has a thick enough skin to have a go at making marrow rum??

It's ripe when it's stopped growing & the skin has hardened. You can feel that the skin is hard - the fruit doesn't give at all when pressed & feels dry. You can try tapping it with a knuckle & it will sound hollowish & the stem near the fruit will be hard too. I've not tried to make marrow rum, but enjoy!
