potato maturity time

potato maturity time

I've seen notes in other threads such as 'pink fir take 20 weeks to mature'  I assume it's not an exact science ie to the day, but does this include the chitting time, or is it time in the soil regardless of chitting?

I'm pretty sure it's the time from planting to harvesting
I try to take one day at a time, but sometimes several days all attack me at once...
