Well chuffed! - Our courgettes are starting to flower and I can start to see courgettes around 1" to 2" in size.

I wondered if anyone has a definitive guide on exactly whats best for them ?  All I have managed to find is this link:

All i can get from that site (at the stage we are at) is to just water, water and water.

Do I need to do anything with the flowers ? - I have heard confliting advice as to what to do with them , ie pick them off or I must manually cross polinate etc

Not unless you want to eat them. 

If you are seeing baby courgettes they are pollinating themselves perfectly well.

There is no need to worry about cross pollination unless you intend to save seed, which would be a lot of hassle and rob you of a lot of potential crop so is not really worth it.
