Can I shred my cabbage?

Here is a pic of my Cabbage, Spinach, Mixed Salad and Lettuce (taken today)

My Questions are: Can I cut the cabbage or pull it, and would it better shredded before I bag it?

Also, is my Spinach still okay to dig up and eat?

It is Hispi F1, and I am leaving this house tomorrow, so it is either bag it and give it away, or dig it up and throw it away

Dig it up and grow on in a pot?

Dunno if that would work, but if it does I would think that will be better than bagging a few immature leaves.
