Bara Brith easy peasy and delicious

a friend gave me this recipe for Welsh Bara Brith, I've made it four times in as many weeks and it appears quite healthy as there is no butter in it (unless like me you spread it on later)

450g self raising
1tsp mixed spice
175g muscavado sugar
1 medium free range egg
orange zest, and the juice
2tbsp honey
300ml cold tea
450g raisens/dried fruit
extra honey for glazing
drop of whisky or whisky liqueur (optional)

soak fruit overnight in cold tea
next day mix together sugar, egg, orange juice, zest, honey, & add the soaked fruit
add whisky (optional but worth it)
stir in the flour and spice
pour into lined loaf tin
bake gas3/160c/325f for about 1 & 1/2 hours, or until skewer comes out clean
baste with honey while still warm to give nice glaze

Fab with lashings of real butter and a cup of tea!

I make a similar one and oh it's good. Don't eat it as well as your Easter eggs though or you won't fit in that bikini :lol:

my mother in law used to make the best bara brith ever but sadly she's unable to do it now as she's ridled with arthritis, I think i will knock some of this up for her and see what she thinks of it
