Hi,  I started 40 pints of cider off in September (as my first homebrew attempt). I racked it for the 2nd time today and thought I should try a sip...it tastes very vinegary (sp?)....not off/mouldy/rancid, but a definite acidic tartness to it.

Is this normal? Is there hope? Can I improve the taste with some extra sugar?

Hi GD

Adding sugar at this stage would just make it very sweet.
If the taste of vinegar is very strong then I would say that your cider has been ruined.
I don't make beer or cider myself just wines, but basically the same principal.
But someone will be along shortly who might have a solution for you.

Thanks for the reply Andy...looks like everyones getting Cider vinegar for Christmas.

Maybe I'll give the Turbo cider a go instead...
