Any suggestions as to what to do with it?  If I do coq au vin do I just marinade the bird in the wine overnight and then add all the veg and slow cook?

You don't have to marinade overnight, if you want to eat it today it would still be ok.  I fry off the veg with some bacon and herbs before adding to the chicken and a little stock, then slow cook until done.
