You can wilt spinach in a frying pan. Some people put a little bit of oil in to start with, or just a splash of water.

Move it around in the pan so that it doesn't stick to the bottom and burn. It will only take a couple of minutes.

Put alot in the pan because it wilts down to only a fraction of what it was to start with.

When it is done you will probably find, if you squeeze the spinach, that there is some water in the pan. Give it a squeeze and pour it away (else it will be all watery and orrid).

You can eat it like that, or add a bit of butter and black pepper. Nutmeg is also nice.

dash of oil or butter , clove of garlic chopped and a small chopped shallot
fry gently till softened, try not to let it burn. toss in the spinach until it starts to wilt. Only a couple minutes usually. serve. lovely !!!

Sounds like you have perpetual spinach also called leaf beet. You can strip it from the stalks if you want to wilt it down as above. Youcould also use the leafs with stalk in stir fries.

Mix cooked spinach with some ricotta, nutmeg and seasoning then roll in tubes of pasta.  Cover with a tomato sauce and some cheese and bake.  If you are more adventurous in tne kitchen add a layer of bechamel sauce too.

I am free for weddings and bar mitzvah's.
Cheese makes everything better.
