Eastern Chutney (Chillies)

Eastern Chutney (Chillies)

This is a really hot one, and remember to always wear fine rubber gloves when making.

3lbs apples
1 quart french wine vinegar
2oz garlic
1/2lb green ginger
1/2lb seedless raisins
1/2lb fresh chillies
1/2lb mustard seeds
1lb brown sugar
1pint water
4oz salt

Peel and cut apples and boil in half vinegar, crush garlic, grate ginger, chop raisins  and chillies (last 4 can be done together in processor)  Crush mustard seed with pestle and mortar or rolling pin.
With a pint of water and sugar, make syrup.   Lay apples in a bowl and sprinkle wih salt and other ingredients, add the syrup and the rest of the vinegar, along with vinegar from cooked apples.  Bottle and seal.
It is best after keeping a few months as it mellows and the uncooked ingredients become blended in soft. :evil: Mrs.Bouquet

You hav'nt got a recipe for a hot banana chutney have you Mrs Bouquet? I've found one or two in really expensive farm shops but would love to make my own :)

found a couple of Banana ones, which I have made.  I've just put them on cooking, storing, etc.  Hope you enjoy.  Mrs Bouquet

OMG Mrs Bouquet how much chilli chutney does this make!  You better keep the toilet roll in the fridge if you eat this lot! :ohmy:
