Greyhound is a summer cabbage, I would start eating them now, indeed we have had several of ours and they are delicious .  Ours are very large , well two are used as one of the veg portions/choices at lunch to feed 14 adults.
 I wait till the centres are solid and pick those first, leaving spaces for the others to grow on.

Look out for slug damage. For us has nt been too bad this year, nothing worse than finding the cabbage has been invaded by slugs.

Oh don't worry I definatley have some slug damage! The one nearest the front of the bed is ruined but I left it to protect the others!
