How long can you keep things in seed trays before you MUST plant them outside, or does it matter?  I've got various bits and bobs finally germinating (though still no tomatoes, chillis, peppers or aubergines  ) but the weather seems set to be pants for at least another week, is it worth repotting them, I don't really have anywhere to move them to now have no poly, or just leave them in the seed tray til the weather's a bit better and they can go outside?

What you got in trays, something like brassicas will be good for potting on.

pot them on if they're long and leggy  :D   You can't put your tender stuff out for a while yet so I think you'll have to repot them. Sorry  :D

Yes, it does matter, hence, very early sowings rarely work out, you can't keep them in there, they need more and more space, etc...

The weather is pants on average for many young vegetables till mid/end May,  or further, depending on the novelty of year and where you are.

You don't say, what you have, but I (much further up north) only got carrot, radish, lettuce, rocket, sweet peas and early peas outdoors, sown that is. Have also some cabbage and cauli under fleece and some sweet pea plants in sheltered place. Everything else is well protected as yet, anyway your plants would need a week or two of hardening off before planted out.
