Name the plant

New patch. When I was digging I came across roots of what looked like ginger. I thought I had taken most out but has now grown into this! Any ideas of what it might be. It’s now in the way but it may be precious!

I haven't grown them for years, but I think they're Jerusalem artichokes..

Definitely not ginger. I'd agree with Jerusalem artichokes.
