Can someone advise me how much rhubarb should I resist taking from my plants, as some of them still have quite a few stalks.

I've taken two big harvests off each of my 3 plants so am leaving the remaining 10 stems to let the plants recover as I plan to divide them next year.

Normal advice is not to harvest anything after July, to allow the plant to build up reserves for next year.
It worked for me, this is a picture of some of my rhubarb last season before I moved.

I don't pick much after the end of July, just a few sticks in the autumn to make some chutney
