I find they bolt if too dry as the plants are trying to seed.  Was it dry where you are.  My winter onions are in fine fettle, no bolting.  We have had enough rain to keep them moist.  I also put plenty of compost down before planting so that has helped.

It's usually stress-related, either watering or weather.
I try to take one day at a time, but sometimes several days all attack me at once...

You know I was reading about this, my one were bolting too and it was winding me right up, so I investigated it, onion sets are second year, and in there second year they try and set seed, so if you grow from seed they dont bolt so much, so from now on its seed for me
If Its Not Growing... Its Dead.

We have had a mixed bag with the weather, last two days rain before that dry weather then cold and rain, so the weather has been hot / cold rain / hot.

Think I will give up growing onions

It is usually the fault of the weather but sometimes the sets are to blame. To produce sets onion seed is planted late so that they are only small when they ripen. The flower for the next Spring should not have formed but sometimes the growers get it wrong. Red varieties seems more prone to bolt. Spring varieties can be heat treated to kill any embryo flower.

I sometimes wonder if it is worth it and it definitely isn't financially!  I bought a bag of about 20 onions for £1.75 at my local shop. Mind they were a bit soft (the onions, that is, not the the shop  :D )

Probably not worth it in money terms but I just like growing onions.

It isn't worth it in money terms (shallots probably are but I find them more tricky than onions).  But I do quite like having something growing on the plot over the winter rather than just bare earth.  It lifts the spirits.

Onions are so nice to grow and eat.

Some of the spring onions bolted but the Senshyu are really bulking up now much better than the photo below
