Red-lentil and pumpkin dahl recipe

Reciepe me please  :D yum.  wish I was that organised.

Red-lentil and pumpkin dahl recipe  Serves six
3 tbsp rapeseed or sunflower oil
1 large onion, finely chopped
500g (1lb 2oz) sweet pumpkin or butternut squash, peeled and deseeded and cut into 2.5cm (1in) chunks (prepared weight).  I used an onion squash.
150g (5½oz) tomatoes, chopped
3 cloves garlic, crushed
2 tsp dried chilli flakes
3cm (1¼in) piece ginger, peeled and grated
2 tsp ground cumin
½ tsp ground turmeric
225g (8oz) red lentils
1l (1¾ pints) vegetable stock (optional)
3 tbsp chopped coriander
Heat half the oil in a heavy-bottomed pan and fry the onion until it is golden brown. Meanwhile heat the rest of the oil in a frying-pan and sauté the pumpkin pieces until they are golden all over.
Add the tomatoes to the onion and cook for a further four minutes, then add the garlic and spices and cook for two minutes, stirring a little. Now add the lentils and pumpkin to the onions and pour on the stock or 1l (1¾ pints) water. Season – this needs plenty of salt – and bring to the boil. Turn down the heat and cook for 20 minutes, until the lentils have collapsed and the pumpkin is tender. The mixture should be thick. Check the seasoning. Serve with rice, plain yogurt and the coriander.

I messed around with it a bit to cook it in the slow cooker, which worked great.  Didn't sauté the squash, just chucked it in the slow cooker with the tomatoes and the lentils.  Then added the sautéd onions, with the spices and a little bit less stock.  Bob's your mother's brother!   :)

Nice to be reminded about combinations of food we haven't had for a while. Plenty of winter squash in storage so will be cooking this later in the week I reckon. Thank you!  :lol:

ooh, me too. sounds lovely - and like Sunny, I have some squash and pumpkins left in storage. Nice with some fluffy rice or a warm chapati. mmmm Thanks
