Off work today as feeling under the weather so thought I would convert some of my tom sauce to ketchup. Aiming for something similar to Heinz and have read some copycat recipes. Wow! so much sugar!  I hadnt realised. Anyway, so far I have added celery salt, cloves, ground coriander, cinnamon stick, some sugar, honey, white wine vinegar, black pepper. Now simmering away. Does anyone else have anything to add ? or a good recipe? It has to be from homemade sauce as the base. As I have so much !

I'd pop in some garlic, Steve, but that's my personal addiction...

My sauce is just reduced toms with garlic and Italian seasoning, and no oil.

Ah yes, I should have said: the base sauce already has loads of garlic snd onions and also basil in it. I also sneaked in a tube of tomato paste. Thanks

Just remembered I also added bay and herbes de Provence to the original sauce

I tried making it last year but it just wasn't right, tasted stewed somehow, but that might be because I used less sugar than the recipe stated. I guess my attitude if I did it again would be that however it turns out, I made it out of good stuff from the garden so it IS better than bought. Used it as a handy pizza topping eventually.

PS I only have it a couple of times a year anyway! OH doesn't care as long as it's red and sweet.

Cos of the botrytis this year, I haven't had enough spare tomatoes to make any  :(

I've let it cool and done a taste test.Very passable. Not quite as sweet as Heinz but thats ok. Slightly runny so will now reduce it which will also intensify the flavour. When its done I shall decant it into the Heinz bottle and test it on my daughter 😊

I put chilli peppers in mine and a 1/4 teaspoon of tabasco sauce (to a kilo of fruit), but I start from tomatoes, not a sauce and I'm not aiming for a heinz lookalike but something with a bit of a kick to it.

Yes Growster but you know how fussy kids are. If its not up to the mark she will let me know. Still cant forgive her for putting it over prime hereford rump steak though!. Sacrilege !
