Here we are already with the elder trees laden with ripe fruit which this year I intend doing something about. 
Im looking for favourite recipes so would be interested in what others do. So far, the ones which catch my eye, are: jam, gin, cordial, sorbet, ice cream, and jelly. Do you have a favourite?

It should really be wine, Steve, as they make a fabulous red, which can be drunk after a month max!

I reckon you'll need about four pounds for a gallon, and just ferment them on the pulp for about ten days!

Last year I made a hedgerow jelly, and added some elderberry for the first time. I wasn't sure of the taste when first jarred - and they got left at the back of the cupboard. Opened a jar the other morning and now, it is superb   

Will deffo be picking some more this year
