This year I want to master a new skill...... Sausage making.

I want to buy a piece of kit grinder sausage filler etc, I don't want to spend a fortune but want to master this any advise would be very much appreciated

I'd suggest you check out some of the many youtube videos on making sausages to get a general idea of the process, and personal likes and dislikes of the people filming. You might find common thoughts on perhaps what pieces of equipment to avoid, or what they wish they'd bought instead.

I have a Kitchen Aid unit and it came with the meat grinder attachment that I assumed would tick every box for me. Not a chance! As a meat grinder, the unit is useless but it does a nice job of stuffing. In the end, I bought a Cuisinart meat grinder unit that includes stuffers and wow, this unit does a fast and great job. It's not heavy duty but for the little I do, it's great. I found a unit half priced which really eases the financial pain since it spends most of the year on the shelf.

You can also check out some web blogs on charcuterie for actual recipes, tips, recommended books, etc. This way you can make the wisest investment with your money and time.

I used to love making sausages, but a certain person who used to work in a butcher's in his school holidays always took over, so I was relegated to shoving the meat down the tube!

Took the fun out of it, so now I just make the sausagemeat and make them into patties, or I just make burgers!

I know he could tie them properly and they were all the same size, but............

I used the mincer and sausagemaking attachment I got for my kenwood chef.

I used my Kitchenaid for mincing our male chickens - worked very well and the sausages are nice and tasty. Its best to have the chicken quite close to frozen - the harder it is the better it minces.

I used a dedicated stuffer which I bought off ebay - no idea what its called and I got my supplies from Weschenfelder - though this time I used breadcrumbs rather than the proprietary crumb
My maths shows that bird is equal to or greater than the word...

Separate sausage stuffers and mincers on ebay.

We are more than happy with our Kenwood though.

Our friend in the village got his from Amazon.  Not sure, it may have been the Andrew James one, but last time I asked, its still in the box!

Thank you all for the links I have had good read, mastered pasta and burgers last year so very keen to nail makng sausages
