I've been given a carrier bag of clementines which are a little past their peak, but still perfectly usable.  I've made a batch of Clementine & Cointreau Marmalade, and have just found a recipe for Spiced Pumpkin Marmalade that uses Seville oranges ... as I have some pumpkin I need to use up, I wondered whether I could substitute the clementines for the Sevilles?

I think the sevilles are sharper (tart) hope it gets through those in authority!  So I'd ease off on the sugar.

I made some grapefruit and lemon marmalade, the first batch I forgot to add the sliced peel until 1/2 hour before the end - it still gets eaten.

I don't know Tony - these clems are pretty tart actually, but the recipe also includes 1lb lemons so I don't think the sweetness should be a problem!  I was really just wondering about the pectin content/setting quality of clems versus sevilles?

I often make jam with non-seville oranges/tangerines/manderins.
As long as I've included a couple of lemons (at least) it seems to set just fine  :)

Thanks Mum - I was hoping so, but haven't used clementines before for anything else, so wasn't sure about replacing 'proper' oranges!  I've got some gorgeous Turkish lemons from my local greengrocer - absolute whoppers, so hopefully they'll do the trick  ;)

you can buy a tin of saville orange concentrate by Hartley its about £1.90 and is enough for 6 jars , it will be more if you are adding other stuff , I use it and find its good for me and you don't have to wait for the oranges to come in .
