Can i add pickled beetroot to soup

I'm really enjoying vegetable soup with beetroot, just wondering if I can use the piclked once the fresh is all gone?

No reason why you can't. Most beetroot doesn't have that much vinegar in the pickling. Any sweeteners will disappear in the liquid anyway.

I do a julienned beetroot that just has some vinegar and salt in it. It can be used as a sidedish or thrown into soup to make borscht.

its my own pickle so it just vinager and a tiny bit of sugar.

Why not use some cut into fine strips or small dice to add to tomato or carrot or winter squash soup as a garnish and add a tang to the soups.

Thinking about my pickled beetroots they are a little sharp and I think they may be too vinegary to make into soup but used as a garnish in soup would zing it up.

Yes I was thinking of a couple of slices to a nice mixed veg soup.
