what to do with very large runner beans
« on: October 26, 2013, 19:34 »
Taking down the runner beans and I have pounds of very large pods.   Am I best trying to dry them out in the pods or take them out to dry. If they are eaten fresh would they be like a broad bean. Most the beans are white.  I don't won't to waste them but not sure how best to use them .   Thanks

If drying them leave them in the pods or you might damage them getting them out. They're not like broad beans, but you can cook & eat them fresh.

I leave them in their pods to dry, for winter - but then you have to soak them to cook, like any other dried beans you buy in the supermarket.

You can shell the beans out and use them fresh, just like broad beans although they don't taste the same  ;)
Use as butter beans

Make wine.  It's my Mother in Law's favourite. ::)

As above, wait until the pods are dry, then the beans just fall out!

I love boiling the beans, taking off the skin when they're cold, and making some sort of marinade for them, like garlic and mayo with olive oil...

Sounds a bit fiddly, but is scrumptious!

All mine got a bit too stringy weeks ago so I left them till they got bulgy and then shelled them and used them fresh.  They are lovely, I just steam them for a few minutes.
In fact they are so nice that next year I'm going to plant fewer runners and some kind of beans (Borlotti perhaps?)which I can use de-podded for the late season.

They sound good, to clarify, do you shell then boil or boil then shell?

If the pods are still fresh, we shell them and freeze the beans in small packets handy for soupmaking.

If you want large white beans - I can recommend these

Thanks Mum, they look good, or I might try soya if I can find out whether they are climbers or not.
