what to do with green butter nut squash

My butternut squash are still very green.  Took one off and brought it into the kitchen and no change in colour in weeks.   I have four huge ones outside still and again no change in colour.   If they don't change colour can they still be eaten or made into chutney.

Yes, by all means make them into a chutney or sorts, otherwise eaten, I personally, cannot speak up for.

There seems to be lots of green butternut squash this year. I haven't grown any, but everyone on our site who has seems to have green ones.

Is this everywhere?

Mine look great I have 6 small - medium size ones turning a nice shade of orange I have a massive one which is paler and another small one which is green.

I'm leaving them on the plant for as long as possible before the threat of 1st frost.

I've had 9 huge butternuts weighing between 3 and 4  kilos, an they have got past the green stage. Please don't ask me how I managed it....'cos I don't know!!!!!! :)

You can eat them, they're like a courgette when they're small.
If they're bigger they'll be just a bit less sweet than a ripe one, and won't store as well  ;)

I had a few small early ones ripen, then had a gap and got one big one, and now its chucking mini butternuts out all over the place  :(  I've cut it down to a medium one which is halfway between green-brown now.  It's my first year, so was pleased at any, but seeing the recent productivity think will change a few things for next season to improve yield.

My squash and yes that is the in the singular :) was pretty green when picked but it has been laying around in the kitchen and looks the colour of a shop one or not far off. I did leave quite a long stork on it

I accidentally snapped one off the plant earlier in the summer, but it was just beginning to turn ripe - I brought it home and left it in the conservatory and it has ripened beautifully. Since then a few more have ripened outdoors but others are still at the half way stage. They didn't seem to be making any progress outdoors so i have decided to bring them in and see if they will finish off inside. Fingers crossed. I have had a bumper crop this year  :)

What variety is it?

Barbara, for example, has a green striped/flecked skin (check on T&M website).

I grew these for the first time this year. Seed bought during one of their half-price offers, otherwise quite expensive. But amazingly productive. Had two crops and the second flush were absolute whoppers.

I have four huge butternut squash total 26 lb.   I am really not sure what I can do with them .. just don't seem to want to change colour.   If I use them I will have a huge amount no room in the freezer.  Do they taste the same green as when they are butter colour.

I have only eaten very small green ones and they were edible but nothing like a ripe one.

If you leave it too late you may lose them all. :ohmy:

I left mine laying around in the kitchen with about 5 inches of stalk it is now a perfect colour just like the ones in tesco so I am well happy
