Rowan and apple jelly - how do you eat it?
« on: September 19, 2013, 09:55 »
Hi all

I made Rowan and Apple jelly last night - lovely pink colour.  Quite proud.  Do people eat on toast or use with meat - how do you eat your jelly?

I haven't had or made Rowan jelly, but quince, apple jellies I have with meat, add to the gravy,or glaze meat at the end of roasting. Did you pick the Rowan berries,I have a tree in the garden & have though of using them, any chance of the recipe please?

It was this one. But I used windfall apples of unknown type from a tree in the back lane instead of crab apples. Lot of scum (how nice is that?) but from subsequent reading - a bit late - I should have taken off heat once reached setting point and left for a minute and the scum would have all lifted off at one go.  It's a beautiful colour.

How do you eat it?  Well personally I wouldn't. I made some a year ago and the taste was toooooo bitter, I threw the lot away. It was definately rowan berries I used and didn't get my berries mixed.

Have you tried it yet? you might want to do so if you haven't yet tried it.

I believe it is an accompanyment to roast meat and game and can beadded to gravy and meat sauces rather like redcurrant jelly.

Cheers Mrs B.  I had read it could be bitter...  I'll try some tonight and report back.

I agree. Jellies add a depth of flavour to other dishes.

The apple might offset the sharpness of the rowan berries --- let's hope so  :)

I tried the jelly and it's really quite nice, sweet with an interesting hint of sharpness - think it would be lovely stirred into a sauce for meat or used to glaze ham.  Worth making - but not sure what it would have been like without the apples....

if you add a little butter that should kill most of the scum .

Scum on jellies is a pain.

If you skim as the jelly is boiling to a set to get most of the scum off, and then add some butter or a teaspoon of sunflower oil it  should help. Another thing that might help is, as you wait for your test sample to see if you have reached setting point,  stir continually to disperse any scum/bubbles that are on the top of the jelly. Once the jelly starts to cool any scum will get caught in the setting skin of the jelly and that is a right swine to get rid of.

I have just finished a toffee apple jelly and apple and rosewater and it is definately more of a faff than making jam.

Really glad your jelly tasted nice. I think I will be giving rowan berries a miss. Rowan trees use to be planted to ward off witches; perhaps that is why I can't stand the taste :D

I have just been given a sack and a half of damsons so I think the really tiny ones will be made into a damson and peppercorn jelly. More skimming. :(

I had copied an apple and Rowan jelly recipe from last weekends Telegraph - a Sarah Raven recipe but going on your words Mrs Bee perhaps it would be a waste of time and apples for me too! :D ::)
