lavender and strawberry jam?

lavender and strawberry jam?

If I were to mix some lavender sugar into my strawberry jam mix do you think the flavours would go ?
some people are like slinkys......they're really good for nothing, but they still bring a smile to your face as you push them down the stairs!!

Do be careful that you don't use too much lavender or it might end up smelling and tasting like scent.

Have you tried passion fruit with strawberry? I passion fruit to 1lb of strawberries added after you have boiled to a set.

Well I made the jam lavender taste probably isnt very strong but was a bit unsure as to how much lavender sugar to add but it has made the jam darker and richer ? Delicious anyway  ;)

I think having the lavender as a background flavour was the best way to go.  As Mrs Bee says, don't want it tasting too perfume like  :)

OOh love the sound of apple and lavender - how many flowers do you use?
It would make a lovely jelly jam. :)

Adapted a herb jelly recipe, so only a dozen or so in a 2kg apple mix.  Then added a very few dried flowers into the jelly just before I put it into jars, so you could see what it was  :)

2kg cooking apples
800ml water
275ml wine vinegar
lavender/herbs/whatever you fancy - if using herbs, up the quantity to a decent handful
350g sugar per 570ml juice

Bring apples, water and vingar to a boil in a preserving pan, turn down to simmer, add your flowers or herbs and simmer until the apples are soft.  Strain, then make jelly as usual  :)

I've just made this, using fresh lavender flowers rather than dried, and half the amount of orange juice. It not only makes the house smell amazing, but the taste warrants a proper Sid James-style 'COOOORRRRRRRRRRRRRRR'

I do for jam! Spent under a tenner on sugar for the year, plus some lemons, most of the berries are free and I estimate that I have made about £50 of jam so far, and that jam has less sugar and is tastier than the shop-bought ones. Blackberry and apple jam, chilli jellies and quince jelly still to go then we are stocked up for the year. I only keep 2 jars of each for us, the rest is given away.

But that strawberry & lavender jam is something that's really hard to find in the shops and I love it, so it's great to add to my 'repertoire'.

What a delicious sounding combo --- I'll have to look out for some bargain strawbs as mine are finished now. Will make great gifts  :D
