Mrs G and I have just made 6 pots (about half a pint each), of rocket pesto, as the plants need a damn good haircut!

About 6 pints of rocket leaves - no stems
About 250-300ml olive oil
About 2/3 of a normal bought piece of parmesan cheese grated
6 cloves garlic (that's pieces, not whole cloves)
Handful of walnuts
Desert spoonful of lightly toasted pine nuts

Chuck most of the oil in the blender with some of the rocket, and keep adding the greenery and pushing it down with a wooden spoon to turn into a thick green paste. (turn the blender off of course, at each bash-down..;0) Add the rest of the items, and some salt and pepper if you want.

Eventually, the blender will be turning the whole lot, and you just pour this into plastic pots for the freezer.

This is the first year I've had real pesto, and it really is a great addition to salads and especially pasta, with a few courgettes and a little more cheese!
