Red amaranth
« on: June 28, 2013, 14:49 »
I first heard of it in a novel I read a couple of months back. I obtained a packet of seeds via tinternet, chucked the lot in a seed tray of John Innes, and they've grown very fast! I pricked them out and they grew even faster. :) I'm now struggling to find enough space for them all!
Has anyone else tried them, they're very adaptable culinary wise so I've read?

This should answer most of your questions: LINK

I've not eaten amaranth itself, but I've tried (and love) other similar grains like quinoa which can also be homegrown. Most of the old grains were sources of protein.

It appears that the red variety can be eaten as a leaf vegetable or the shoots used in stir fry.

I've had red amaranth leaves from the chinese supermarket. Very tasty stir fried with a bit of garlic. I'd love to grow some. What variety are you growing and where did you get the seeds?

We took over our allotment from a Carribean Gent and there was Amaranth growing like crazy.  Let us know what you find out.   Cheers,   Tony.
I may be growing OLD, but I refuse to grow UP !
