Likely the weather. If you get 10 straight days with nights below 50F, then they'll bolt.

I wish mine would grow even a little bit  , their the same size as when I planted them out 6 weeks ago

Mine havent moved either since I planted them out about 6 weeks ago, although the stem thickness has increased a little.

Is it possible you could cloche the celeriac, or put some sort of row covers over them to contain any heat?

It's funny you should say that trill, as I have covered one with a bottle cloche as an experiment.

Apparently, they are swampy type plants, so love moisture.

Maybe growing them under 2 litre empty bottle is the way to go, until they're too big ?

It's celery that are bog plants, not celeriac. They're related but don't like the same conditions, particularly as celeriac is a root that would go mushy and rot in boggy conditions.
