Truffles (chocolate)

Would anyone know if I should use cooking chocolate or ordinary eating chocolate to make my truffles. I reckon that maybe cooking chocolate might be a bit bitter not sure.

What % cocoa is the cooking chocolate?  And are you wanting dark or milk truffles?
I try to take one day at a time, but sometimes several days all attack me at once...

Well I was going to try dark and the cocoa is 54% minimum it says.

I think that sounds OK.  70% is the really bitter stuff.

Yes but it is cooking chocolate its like eating it raw don't you think because there is no cooking involved. Do you think if these ones turn out ok I could use thorntons choc chips I love their chocolate

I've never made them and don't know what you do / don't like so can't say what you would find best.

I have just googled various 'dark chocolate truffle' recipes online and they vary from 'plain chocolate' to 70% or bittersweet chocolate. So I guess it's up to you.

A lot of recipes use 70% cocoa,  I wouldn't use cooking chocolate personally, as if you are going to go to the trouble of hand making chocolates you want them to taste good. I am also not sure that cooking chocolate (unless it is very high quality) will work, as it has a higher fat content. I tried to make some white truffles when I made some dark ones and they would not set hard enough to roll into balls. You can only experiment and try. If you do not like the bitter taste try and find a recipe that adds sugar in some way. The one I used added honey, and I thought that they were still not very sweet. Some use glucose syrup. If you have a sweet tooth, 70% dark chocolate and no sugar, will almost certainly not be for you. :)

i would use the ordinary chocolate i find the cooking stuff abit greasy so i never use it now .

Thank you for all your replies. Think I am going to go for the ordinary choc. Thanks for your reply allotmentann, I've have read somewhere that you should use half the amount of cream for white choc and milk chocolate as it doesn't set but full amount for dark chocolate. Hope if you make them again it will work. Thanks everyone again, ordinary chocolate it is.

I've not made truffles, but I use js basics chocolate for almost everything, 30p ish for 100g. Makes a lovely chcocolat mouse!
